Category or sub-category
Firstly how you people find this online shop?, is it working or not before I put all my effort to it.

Secondly in creating the category or sub- category, is given me 3 lauguages and I can only write english. Can't I have only english in my shop and how can I do that?.

Yea, you can have it in English Only.
When it comes to other lauguages, just put anything in, coz no one will ever see it.
